Side Dishes
2 cups cold mashed potatoes
1/2 cups bread crumbs
2 tablespoons grated parmesan cheese
1 tablespoon parsley flakes
1 or 2 eggs
salt and pepper
Potatoes must be cold in order to make patties stay together.
Add all the ingredients except for the eggs to the mashed potatoes.
With a fork blend in one of the eggs. If the mixture sticks together well, then you can omit the second egg, if not, add the second egg and mix together. Take out a small chunk equal to a meatball roll together into a oval shape about the size of a small egg.
When you have made enough patties, heat some vegetable oil in a frying pan and cook croquets until golden, then turn and cook other side.
Remove from heat and place on paper towels to drain excess oil.
May be served hot or cold
